Roasted Chickpeas

Someone left a comment on how to bake chickpeas, so here’s a recipe I’ve made in the past. They really do make a great snack.

Makes 4 servings
Ingredients:

1 12 ounce can of chickpeas (garbanzo beans) drained
2 tablespoons olive oil
salt
garlic powder
cayenne pepper

Directions

1. Preheat oven to 450 degrees F (230 C)
2. Blot chickpeas dry with a paper towel. This is important, because if they are wet when cooked, their temperature won’t go above the temp of boiling water and they won’t roast. 3. In a bowl, toss the chickpeas with the olive oil and season them with salt, garlic powder, and pepper.
4. Spread out in a single layer on to a baking sheet and roast for 30 – 40 minutes until browned and crunchy. Watch carefully the last few minutes so they don’t burn.
